Usal pav - quick recipe

Usal pav is authentic Maharastrian recipe . Usal basically mixture of  sprouted pulses, you can use any sprout beans/pulses but originally it is made with moth[matki] and moon sprouts.  It is healthy as well as tasty food. Here is the quick recipe of Usal .

Fresh Ingredient :
1 cup moong sprouts
1 cup chana sprouts
1 cup moth sprouts
1 cup diced red tomato
1 onion diced
2 green chillies chopped

4-5 garlic cloves [minced]

Spices for the curry: [masala]

1/2 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp coriander powder

3-4 cloves
3-4 black pepper
1 bay leaf
1tsp cumin seeds (jeera)
1tsp  mustard seeds
1/4tsp asafetida (hing)
2tbsp oil
salt to taste

For Garnishing:

1 red tomato [finely chopped]
1red or white onion [finely chopped]
1/2 cup freshly squeezed lemon juice
1cup thin namkeen
1/2 cup chopped coriander


Prep time : 10min          
cook time: 25min
Serves     : 4-5


Ready to Cook :


  • Heat the pan , pour oil into the pan. Add asafetida , mustard seeds and cumin seeds.
  • When they crackle add bay leaf, black pepper and cloves.
  • Add chopped  onions and sauté it till onion turns translucent then add minced garlic, chopped chillies and tomatoes. Sauté it for 3-4  minutes or tomatoes get tender. Stir it occasionally.
  • Add all the spices turmeric, red chilli and coriander powder .
  • Finally add all sprouts ,mix them well in masala and cover the pan . Cook it for 15 minutes or till it get mixed well with the curry.
  • When you serve  usal garnish it with  some chopped tomatos , onions , thin namkeen ,cut coriander leaves and pour a spoon of lemon juice.
          Now its ready to serve with butter pav.
